Balsamic Chicken with Lemony Mushrooms and Beans

This recipe is from Clean Eating Magazine, “Meal Plans Made Easy” Book., 2013. One of our editors picked this book up in a grocery store. We altered the recipe just a bit to make it fast and easy to fix. We know your are a busy women.


  • 1 lb fresh green beans, trimmed and rinsed
  • 2 tsp olive oil, divided
  • 16oz button mushrooms, sliced
  • 4 cloves garlic, thinly sliced (we prefer minced garlic- 2-3 tbsp; it;s easier and faster)
  • 1 lemon, zested and juiced ( we prefer 3 tbsp lemon juice: it’s easier and faster)
  • 1 yellow onion, cut into rings
  • 1 lb boneless, skinless trimmed chicken breast
  • 2 tbsp balsamic vinegar
  • 2 tsp dried thyme
  • 1/2 tsp sea salt (we prefer to omit the salt)


Steam the green beans in the microwave in a steaming bag; set aside. In a nonstick skillet heat 1 tbsp olive oil on low heat. Add mushrooms, garlic, and lemon juice. Saute for 3 minutes. Transfer the saute mixture to a bowl and add the green beans. Mix well and cover to keep warm. Heat the remaining oil in a nonstick skillet. Add onion, chicken vinegar and thyme and saute until done. Serve with green bean and mushroom mixture.

Variations: Tomatoes would be great in this recipe!
